This is an easy casserole recipe that can be readily modified to be low carb or vegetarian. Half of the casserole is low carb and half has the cornbread topping making it a “tamale pie”.
Ingredients:
1 butternut squash
2 Tbsp olive oil
1 onion, minced
1 lb. andouile sausage (or Italian sausage)
1 14 oz can black beans
1 14 oz can diced tomatoes
1-3 Tbsp chile spice (I used mix of chipotle, ancho and harissa)
1 cup shredded jack cheese
1 box corn muffin mix
1 egg
1/2 cup milk
