Mediterranean Frittata Nutrition* (per 1/8 recipe):
Energy – 210 Cal
Fat – 14.6 g
Carbs – 3.9 g
Fibre – 2.1 g
Protein – 14.5 g
*Nutrition Information is based off of the measurements below and using the exact ingredients I used. The macros may vary if you are using different Brands, quantities or ingredients.
Mediterranean Frittata Ingredients (8 servings):
– 12 Eggs
– 1/2 Table cream (you can use heavy whipping cream if you have it on hand)
– 1 Tbsp Nutritional Yeast
– 1 tsp Sea salt
– Black pepper to taste
– 1 jar Artichoke hearts, drained and chopped
– 1/2 bag of Frozen chopped spinach, drained well (~150 g)
– 4 oz. soft Goat cheese
– 1/4 cup Parmesan cheese
Instructions:
1. In a large bowl whisk together the eggs, cream, nutritional yeast, salt and pepper.
2. Grease a 9×13″ casserole dish with 1 Tbsp of Avocado oil.
3. Layer the artichoke hearts, spinach and goat cheese in the bottom of the casserole dish.
4. Gently pour the egg mixture into the casserole dish then top with the parmesan cheese.
5. Bake in a 350°F for 20-25 minutes until browned and bubbly.
