2 min Microwave Keto low carb – Coconut Egg Idli

Going grain-free has never been easy. Whether you have a condition with
leaky gut that pushes you to go grain-free or you have to lose that extra weight through a Keto diet, I have a solution for you. Try this Idly, that can be made in mere minutes, for breakfast along with mint or tomato chutney.

Idli or idly is a type of savory rice cake and is popular as a breakfast food throughout India and Northern Sri Lanka. My recipe incorporates coconuts and eggs in place of rice, which makes it a low carb delicacy!

Ingredients
4 tbsp unsweetened coconut flakes or shredded coconut
1 white or brown egg
1 tsp baking powder
3 tbsp unrefined coconut oil
salt as needed

Mix wet ingredients first and then the dry ingredients
grease the microwave bowl and pour the batter
microwave for 1-2 min depending on your appliance
cool and serve
