Curry Coconut Chicken Tenders/Chicken Breast (or use thighs)

Using chicken tenders makes this a breeze. You can also use chicken breast, and cut the breasts in half width-wise. Or use thighs.

Season chicken w/ salt, and a little sweet (or hot/spicier) curry powder (I also use Real Salt.)

Turn on your grill or cast iron skillet to med-high heat.

Add a generous amount of butter (like Kerrygold) and some coconut oil. If using a grill pan, you can wipe some butter across the ridges if you want, but if the pan is well seasoned, it isn't mandatory.

Cook until you begin to see the white around the edges, or until you have nice brown grill marks. Flip. Cook until it's fairly firm to the touch when you press on it. Check the inside. Try not to over cook, or it will dry out. Pour the excess coconut-butter sauce on top, and enjoy! Super tender and delicious. Make extras for leftovers.
