Cajun Jambalaya Ingredients:

Riced Cauliflower:
• 2 1/2 cups – riced cauliflower

• 1/2 tsp – garlic powder
• 1/2 tsp – onion powder

Jambalaya:
• 2 Tbs – extra virgin olive oil
• 2 – skinless, boneless chicken thighs, chopped
• 8 ounces – Andouille sausage, sliced and quartered
• 3 green onion stalks (chopped)
• 1/2 green pepper (chopped)
• 2 stalks celery (chopped)

• Cajun Seasoning:

• 3/4 tsp – salt
• 3/4 tsp – garlic powder
• 1/4 tsp – black pepper

• 1/4 tsp – dried thyme
• 1/4 tsp – cayenne pepper (omit for less spicy)
